Queso Keto Taco Soup

Wow, this recipe from Kasey Trenum is AMAZING!! I can’t say that I follow a keto diet, but whether you do or you don’t this recipe is a Winner! It’s healthy, scrumptious, and so easy to make! Just in time for fall get your warm and fuzzies on while you enjoy a big bowl of this soup! Yummm!!!

1. Brown ground beef and onions together then drain (we buy local beef, but I forgot to lay it out so store beef it is)!

2. In a large saucepan add ground beef and softened cream cheese on low/medium heat. Stir together to mix well before adding any other ingredients 

3. Add the rest of the ingredients and simmer on low for 30 minutes.

4. Add salt and pepper to taste.

Optional: Serve topped with freshly grated cheese, sour cream, jalapenos, and/or guacamole.

Prep Time: 20 min.
Cook Time: 30 min.
Total Time: 50 min.

Ingredients:

1 lb ground beef
1/2 small onion, chopped
6 oz cream cheese, softened
2 10 oz cans of Rotel
1/2 cup heavy whipping cream
2 1/2 cups beef broth
1 tsp garlic powder
1 packet taco seasoning
salt and pepper to taste

Directions:

1. Brown ground beef and onions together then drain. 

2. In a large saucepan add ground beef and softened cream cheese on low/medium heat. Stir together to mix well before adding any other ingredients 

3. Add the rest of the ingredients and simmer on low for 30 minutes.

4. Add salt and pepper to taste.

Optional: Serve topped with freshly grated cheese, sour cream, jalapenos, and/or guacamole.
