Easy Chicken & Egg Noodle Casserole…

My featured post today is from my sister-in-law, Amy. She’s sharing my ABSOLUTE favorite casserole from @tasteofhome. It’s soooo easy and good!! If you’re looking for something to do with your extra turkey this holiday… put the turkey in place of the chicken! Amy has been making this casserole for years and it’s been hard to wait to share it because it’s that good!


I want to start by thanking my wonderful sister-in-law for the opportunity to share one of our family’s favorite recipes. I’m sure other moms out there feel this way, but I have a couple of the pickiest eaters at home (myself included)! Our kids (4 yrs and 6 yrs) would both eat peanut butter and jelly sandwiches and macaroni and cheese for every meal if we allowed them to. However, this recipe is a hit even with their picky pallets. My daughter constantly requests, “the chicken stuff with crackers… yum!”

I also love this recipe because it makes a great dish to share with friends or family. It can be prepped a day in advance for a family gathering and freezes well. So, if you need a dish to share and are tired of lasagna, this one is a winner! I’ve shared with my husband’s coworkers after their youngest child arrived and at numerous family/church potlucks.

Directions:
1. Preheat oven to 350 degrees.

2. Cube chicken and cook over stove in light olive oil.
3. Cook noodles according to directions.
4. Mix cream of chicken soup, sour cream, milk, salt and pepper large mixing bowl.
5. Add cooked chicken and noodles.
6. Spread in 9” x 13” baking pan and sprinkle crushed crackers on top.

7. Melt butter and drizzle on top of crackers.

8. Bake uncovered 30-35 minutes or until bubbly

6 cups egg noodles
2 – 14 oz cans of cream of chicken soup
1 c sour cream
¾ c milk
¼ tsp salt
¼ tsp pepper
1 lb chicken breast
1 c crushed Ritz crackers
¼ c butter
Red Pepper Flakes for a little spice (optional)

    It’s delicious. I like to make it ahead and put it in the freezer for last minute dinner or to deliver to family or friends. Definitely a family favorite!
