Bell Pepper Nachos

Summer temperatures have finally showed their true colors in the Midwest! Thank Goodness!! Along with loving the summer sun and pool days another one of my favorites is the fresh fruits and veggies! My husband and I both LOVE loaded nachos. Since it’s also bikini season we’re trying to be a smidge more mindful & tried out this famous Tik Tok recipe for a healthier version! It was soo good I had to share!


1. Brown 1 pound ground beef and add taco packet (follow directions according to packet)
2. Meanwhile, wash and cut the bells peppers – remove stems and seeds
3. Place the peppers on a pan (I would use a baking sheet or parchment paper) and scoop in the taco mixture
4. Top with your favorite cheese



5. If you have a burner on your stove you can quickly melt the cheese by turning it on Lo and leaving them in for 1.5 -2 minutes otherwise pop them in the oven to melt the cheese


6. Top with sour cream, salsa and other desired toppings


Ingredients:
1. 1 pound ground beef
2. 1 bag of baby bell peppers
3. Shredded cheese of choice for topping
4. Sour Cream
5. Salsa
6. Additional toppings ideas – guacamole, avocado, hot sauce
