Easy Low Carb Keto Chicken Recipe with Bacon & Ranch

This recipe from @fabulesslyfrugal is delicious and a family favorite at the Havens’ Residence. The nice thing is we usually always have the ingredients on hand and our kiddos love it! So it’s a win-win in my book! Did I mention how easy it is!! On top of that it’s low carb. I’m by no means a health nut, but when we’re trying to eat healthier this is always on the menu!!

The ingredients needed are pictured above! You can substitute a Rotisserie Chicken for cooked chicken. I prefer the Rotisserie because it adds extra flavor and makes the recipe that much easier!

Before beginning to mix the ingredients preheat the oven to 350.

In an oven-safe skillet, melt butter over medium heat. Reduce heat to medium-low and add:
Ranch seasoning
Cream Cheese
Heavy Cream
Broth
Crumbled bacon
Cheese.
Whisk to combine and cook sauce for about 5 minutes.
Meanwhile, steam the broccoli. Stir the broccoli and shredded chicken into the sauce mixture.
Sprinkle 1 1/2 cups shredded cheese and 1/2 cup crumbled bacon over top.


Cook in oven for about 20 minutes, until bubbly throughout and cheese is melted. Then move to top oven rack and broil for 2-3 minutes, if desired. Serve warm.

PREP TIME: 5 mins | COOK TIME: 25 mins.
YIELD: 5 cups | SERVES: 5

INGREDIENTS:
2 tablespoons butter
1 1/2 tablespoons Homemade Ranch seasoning mix (I use the dry Ranch seasoning=about half the packet)
4 ounces cream cheese, softened to room temperature
1/4 cup heavy cream
2/3 cup reduced sodium chicken broth
1/4 cup crumbled cooked bacon
1/2 cup shredded cheese
10.8 ounce frozen broccoli florets or about 4 cups broccoli
2 cups shredded cooked chicken (I usually use a rotisserie chicken)

TOPPING:
1 1/2 cups shredded cheese
1/2 cup crumbled cooked bacon

DIRECTIONS:

  1. Preheat oven to 350 degrees F.
