Cheeseburger Soup

I don’t know about you guys, but there’s been no time like the present for some soup! With the temps in the negatives it’s been calling my name. I got this soup from my mother-in-law and adapted a few things. Out of curiosity I was checking out other Cheeseburger soup recipes and it appears she must’ve gotten in from @tasteofhome. I did change my recipe to a slow cooker and switched up a few things, but that’s where the original recipe comes from! Glad I stumbled upon it as I always give credit if it’s not my own! Anywho… this soup is easy and delicious! It makes a lot too – so you can share it with all of your friends and family. You can even freeze it for another cold day!

1. In a pan brown hamburger (drain if needed) and set aside
2. In the same pan melt 1 T. butter and saute the onion, carrots, celery basil and parsley until tender
3. Combine the meat and veggies. Transfer to a slow cooker, add the potatoes, chicken broth, salt and pepper
4. In a small pan melt remaining 3 T. butter. Add flour; let bubble (3-5 min) and add to the slow cooker
5. Mix all the ingredients together and add the cubed Velveeta cheese
6. Mix in the sour cream shortly before serving

Ingredients:
1/2 Ib. Hamburger ( I used our entire package which was 2 pounds)
3/4 c. chopped onion
3/4 c. shredded carrots
3/4 c. diced celery
1 tsp. dried basil
1 tsp. dried parsley flakes
4 T. butter (divided)
3 cups chicken broth
4 cups hash browns
1/4 c. flour
8 oz. Velveeta cubes (2 cups)
1 1/2 cups milk
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup sour cream

Directions:
1. In a pan brown hamburger (drain if needed) and set aside
2. In the same pan add the onion, carrots, celery, basil, parsley, 1 T. butter and saute – add salt and pepper
3. Transfer the meat to a slow cooker, add the potatoes and the chicken broth
4. In the same pan melt 3 T. butter and flour and add to the slow cooker
5. Mix all the ingredients together and add the cubed Velveeta cheese
6. Mix in the sour cream shortly before serving
7. Top it off with some bacon, shredded cheese and additional sour cream!
