Better Than Summer Vacation Chex Mix

Disclaimer: There is actually a different name for this recipe… I won’t spell it out for you, but lets say I didn’t think it would be appropriate to put in the title!! I stumbled upon this before John and I were married from @pinterest. My husband was just saying the other day how I need to share this one because it used to be our go to. It’s soooo addicting! So if you don’t want to eat the whole pan I’d have a party or don’t make it LOL!

1. Pour measured cereal into a large microwaveable bowl
2. Line cookie sheet with waxed paper or foil
3. In a 2 cup microwaveable measuring bowl, microwave brown sugar, butter and corn syrup uncovered on high for 1-2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Pour caramel mixture over cereal, stirring until evenly coated.
4. Microwave on high for 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes. Break into bite – sized pieces.

5. Make sure Check mixture is cool to the touch (so candy doesn’t melt). Evenly sprinkle mini peanut butter cups, candy and mini marshmallows over the Chex mixture.

6. In a small microwaveable bowl, microwave caramel baking bits and cream uncovered on high for 1 minute or until chips can be stirred smooth. Use a spoon or fork to drizzle over Chex mixture.
6. Repeat with milk chocolate baking chips and again with the white baking chips. Quickly sprinkle coarse salt over all the Chex mixture while candy drizzle are still wet. Refrigerate until set. Break apart and store in a tightly covered container.

Try not to eat it all in one setting!!!

8 cups Chocolate Check Cereal ( If you can’t find it, you can use 6 cups Rice Chex Cereal and 2 cups of Cocoa Krispies or just use 8 cups of Chex Original and it’s just as good!
6 Tbsp. butter

1 Tbsp. heavy cream
1/2 cup white chocolate chips
3/4 cup packed brown sugar
3 Tbsp. Light Corn Syrup
1 cup MINI Reese’s Peanut Butter Cups
1/2 cup caramel bits
1/2 cup milk chocolate chips
1/2 – 1 tsp. coarse sea salt
